Chicken Asparagus Casserole

- Ingredients:
- 6 whole Chicken Breasts, cooked
- 1 medium Onion, chopped
- 1/2 cup Butter
- 1 8-oz. can Mushrooms (or fresh equivalent)
- 1 10-oz. can Cream of Mushroom soup
- 1 10-oz. can Cream of Chicken soup
- 1 12-oz. can Evaporated Milk
- 1/2 lb. Sharp Cheddar Cheese, grated
- 1/4 tsp. Tabasco sauce
- 2 tsp. Soy Sauce
- 1/2 tsp. Salt
- 1/2 tsp. Black Pepper, crushed
- 2 Tbsp. Pimentos
- 2 14.5 oz. cans Asparagus Spears (or fresh equivalent)
- 1/2 cup slivered almonds
- Directions:
- Cut chicken into bite-size pieces; set aside.
- Sauté onion in butter in a large saucepan. Add remaining ingredients except chicken, asparagus, and almonds. Simmer sauce until cheese is melted.
- Place a layer of chicken in a large 9x13 casserole dish, add a layer of asparagus, then top with sauce. Repeat layers ending with the sauce. Sprinkle with almond slivers.
- Bake at 350 degrees for 30 minutes, or until bubbly. Do not add any liquid, even if the casserole looks dry.
- Serve over rice, biscuits, or with dumplings.
